Making Muffins with the Family

Today, my sisters and I got to make banana muffins and quadruple chocolate muffins. Both muffins were delicious. My sisters and I are going to be making muffins for breakfast like these muffins more often for school because they're time-saving. The banana muffins came from Simply Recipes, though we made some alterations to the recipe. Below are the recipes for each muffin with a picture of our muffins:

Banana Muffins
Prep time: 10 minutes            Cook time: 30 - 40 minutes            Yield: about 17 - 18 muffins

  • 1/2 cup melted butter
  • 1 cup of sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract

  • 1 1/2 cup of all-purpose flour
Directions
Preheat the oven to 350°F (175°C), and lay out 17-18 regular-size muffin cups on a pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir melted butter into mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into the muffin cups, filling only about 1/3 of the cup.
Bake for 30-40 minutes at 350°F (175°C), or until toothpick comes from the center clean.
Remove from pan and let cool. Serve with some butter and enjoy!
